Proso Millet (Panicum miliaceum): Nutritional Composition, Functional Attributes, and Health Implications..

The ancient cereal grain known as proso millet (Panicum miliaceum L.) is receiving more attention due to its remarkable nutritional value and health benefits. Rich in important amino acids, minerals, antioxidants, and naturally gluten-free dietary fiber, it promotes heart-healthy, low-glycemic diets. Despite these advantages, its integration into mainstream food markets has been limited. However, its comeback has been sparked by growing health consciousness and the need for functional and gluten-free cuisine. Growing consumer understanding of the link between diet, health, and disease prevention, especially regarding celiac disease, gluten intolerance, obesity, and diabetes, continues to drive this trend. This review underscores the nutritional and functional significance of proso millet as a sustainable, health-promoting grain and the need for enhanced research, awareness, and marketing efforts to reestablish its importance in contemporary nutrition.

Because of their gluten-free properties and suitability for individuals with celiac disease, millets are also replacing popular cereals, offering patients and the health-conscious public a better option. They might be added to food for biofortification, which would increase its nutritional value.

Additionally, millets are rich in lignans, phytosterols, polyphenols, phytoestrogens, and phytocyanins, several phytochemicals linked to good health. Millets are processed and milled to remove the layers that contain rich sources of fiber and phytochemicals, as well as the germ and bran. Antioxidants such as phenolic acids and glycated flavonoids are abundant in proso millet. Additionally, millets can increase the effectiveness of probiotics by acting as prebiotics. Various millet cultivars have varying nutritional values, which is helpful when creating goods with additional value. Millets include very valuable components of nutraceuticals that help prevent several diseases associated with a lifestyle, including diabetes, low and high blood pressure, cancer, and cardiovascular disease.
