Black mustard seeds are valued as delicious food ingredient since ancient times. The Black mustard seed is widely used in indian cooking and is the most pungent of all mustard seeds. The small and tiny black mustard seeds are excellent for curries, as they give each recipe a somewhat spicy, aromatic note. The enzyme Myrosine is what creates that special taste of the black mustard seed. Roasting the seeds in Ghee keeps the taste subtle and create a less pungent, yet nicely nutty flavor to curry pastes.
